Buffalo Chicken Dip

I’m going to be super lame today and post a recipe with no photo.  I’ve been planning to share this recipe for about 4 months now, but I haven’t been able to get a decent photo.  This dip is NOT photogenic, but it IS delicious.  In fact, it is one of those foods that I can’t stop eating.  Apparently neither can anyone else, because every time I make it for a party (Minute to Win It, The Littlest Apple’s Birthday Party, and this weekend’s football get together) it is the first thing to go.  I love this dip so SO much.  I got the recipe from my mom, who got it from my cousin who got it from her friend.  (By the way, I never know how much my friends and family actually want me to share about them on the blog, so I always play it safe and keep them all nameless).  The recipe below details exactly how I make this dip.  My mom uses canned chicken, so I do too.  I normally detest canned chicken, but it works really well here because it shreds nicely and makes the dip quicker to throw together.

SO easy to make and SO addictive (and SO not good for you)!

Buffalo Chicken Dip

Ingredients:

  • 1 can chunk chicken
  • 1 block (8 ounces) Neufchatel cheese
  • 1/3 bottle Frank’s Buffalo Sauce
  • 1 1/2 cups shredded Colby Jack cheese

In a microwave safe bowl (I often use an 8″pyrex dish or a 1 quart baking dish), use a fork to shred or break up the chunks of chicken.  Mix in the cream cheese, Frank’s Buffalo Sauce, and 1/2 to 3/4 cup of the shredded cheese.  Combine well.  Top with remaining shredded cheese.  Microwave for 6-7 minutes, or until the edges of the cheese are starting to get a little brown (those brown edges are my FAVORITE part!).  Allow to cool for a few minutes, then serve with tortilla chips, celery, and/or carrots.

    i wish you had made it to a bbq we were. you were sick but the picky apple and littlesst apple came and i had made this! it is awesome!!

    You know, I think I WAS there (at least one time when you made it). Your dip was the first time I tasted Buffalo Chicken Dip. And it was love at first taste. Did you use ranch or blue cheese in yours? I know I tasted it somewhere that had an extra little kick.

    I make this all the time. I usually double it, use lowfat cream cheese, 2% cheese, and some lowfat ranch. I also put it in a crockpot on high about 30 mins before guests arrive and it stays warm until it is all gone. Good call on not posting a picture… it is not pretty.

    I just made this on Sunday for the Cowboys game. I put it in my little crockpot so it would stay nice and warm through the whole game. It’s so good I think I could eat the entire batch all by myself! 🙂

    I love that you used lowfat ingredients for your dip, and I bet the ranch adds some extra zip. I’ll definitely try that next time.

    Why didn’t I think to use my crockpot to keep it warm?! That’s a great idea!

    I made it for that game too, but unfortunately the game was a bust for us in Houston. The Picky Apple doesn’t eat this dip so I HAVE made it just for me and eaten it all myself….not all at once! I’m definitely breaking out my crockpot next time!

    Hubby makes this all the time and it’s always a huge hit. He uses fresh shredded chicken and blue cheese dressing instead of the colby jack. It is so good, I will eat it all week for lunch (and snack, and once breakfast)! We also use a crockpot to keep it warm at parties.

    I finally had a chance to make this last weekend and it was YUMMO!  Soooo loved this.  My oldest daughter didn’t want to try it at first because of the look of it, but in the end decided to try it and was bumbed that she didn’t try it before it was nearly gone!  LOL
